Delicious and well filled omelet with smoked salmon, mozzarella, spinach and tomatoes. Perfect for a heavier lunch or to make your evening meal easy and quick!

Ingredients for 2 pers.:

  • 4 eggs
  • 50 gr smoked salmon
  • 100 gr fresh spinach
  • ½ red onion
  • fresh dill
  • fresh basil
  • 1 large tomato
  • mozzarella
  • pepper

How to prepare it:

Peel and fine slice the onion. Chop the fresh herbs and cut the spinach. Cut the tomatoes in quarters, remove the seeds. Cut the tomato in small blocks. Cut the salmon and mozzarella in small pieces as well.

Break the eggs in a mixing bowl and mix the yolk and egg white firmly. Place a large baking pan on the stove. Add a bit of oil or butter and add the onions. Add the salmon after a minute and let the salmon become smoothly pink, stir once in a while. Now you can add the spinach and the tomatoes. Bake for another minute before adding the egg mixture. Make sure the ingredients are evenly distributed in the pan. Divide the mozzarella on top and finish with sprinkling the fresh herbs and some pepper over the egg.

Bake the egg on a average fire until the egg mix has thickened.
