This is one of my personal favorite pasta’s. It’s very easy to make and so tasty with all the fresh herbs and I just love shrimps!

Ingredients for 2 pers.:

  • 200 g pasta flour
  • 2 eggs
  • olive oil
  • 500 g large shrimps
  • 1 spring onion
  • 1 garlic clove
  • 5 large pomodori tomatoes
  • 1 lemon
  • fresh herbs: basil, parsley, thyme, sage, oregano and chives
  • salt and pepper

How to prepare it:

As with all my pasta dishes, the recipe is written based on making fresh pasta, but I will also indicate when you can start cooking the dried pasta.

If you do make fresh pasta, start preparing the pasta dough, weigh 200 gr special pasta flour and mix it (in the food processor) with 2 eggs and a bit of salt. Once the dough turns firm, put it in the fridge for about 15 minutes. Put on a pan of water on the stove to cook the pasta, even if you are going to use dry pasta.

Boil water to skin the tomatoes. Make a cross in the skin of the tomatoes and place it in the boiling water. After 2 minutes drain the water and cool the tomatoes with a lot of cold water. Remove the skin and seeds from the tomatoes. Cut the flesh into small cubes.

Finely chop all the herbs. Grate the zest of the lemon and chop it finely. Peel the garlic, cut it about half and remove the root.

Clean the spring onion and chop it into small rings. Pat the prawns dry with a piece of kitchen paper.

If you use dried pasta, put it in the boiling water now.

If you make fresh pasta, make sure your countertop is clean and dry to roll out the pasta dough. Brush your countertop with a bit of flour and roll out your pasta dough into a hefty rag.

Cut strips of pasta dough that fit in the pasta machine. Roll out the bars well and roll them up to 3 times through the machine. I use the tagliatelle pasta variant for this recipe. Once you have turned the pasta, you’ll hang it on your drying rack.

Put a large pan on the heat and let some butter melt in it. Add the prawns. Fry the prawns for a few minutes on both sides.

First add plenty of sea salt and a drizzle of olive oil to the boiling water for the pasta. The pasta should cook about 5 min. Put the pasta in the pan and cook for 5 minutes.

Add the chopped herbs, lemon zest and some pepper to the prawns. Stir everything well together. Squeeze the garlic into the prawns. Now add the tomatoes and spring onion. Keep stirring well. Add two scoops of the cooking liquid of the pasta and add the drained pasta to the prawns in the frying pan. Stir well until most of the moisture is absorbed. Add some pepper to taste.
