Fresh lamb’s lettuce salad with marinated and grilled tomatoes.

Ingredients for 2 pers.:

  • 3 large pomodori tomatoes
  • fresh thyme
  • 1 garlic clove
  • olive oil
  • balsamic syrup
  • salt and pepper
  • 100 gr lamb’s lettuce
  • pine nuts

How to prepare it:

Cut the tomatoes into thick slices. Put a good drizzle of olive oil and some balsamic syrup in a mixing bowl. Add some salt and pepper to this. Peel the garlic and cut it about half, remove the carrot. Press the garlic to the oil. Stir the oil well. Thread the thyme off the twigs.

Place the tomatoes in a flat baking dish. Sprinkle the thyme leaves over it. Drizzle the oil mixture over it.

Place the tomatoes under the grill for 10 minutes. In the meantime, fry the pine nuts, make sure they do not burn.

Allow the tomatoes to cool for a while, then serve with fried pine nuts and on a bed of lamb’s lettuce.
