Boiled eggs filled with a spicy avocado mash. Surprisingly tasty and colorful. An addition to your Easter brunch table.

Ingredients for 4 pers.:

  • 4 eggs
  • 1 avocado
  • lemon juice
  • salt and pepper
  • red chili pepper

How to prepare it:

Boil the eggs for 10 minutes so that the yolk is coagulated. Cool the eggs down with really cold water. Once they are cooled down, peel of the shell. Cut them in half and take out the yolk. We won’t use the yolk for this recipe so I suggest you use it to create a nice egg spread.

Cut the avocado in half and remove the seed. Take out the meat and grind it with a fork. Add a bit of lemon juice, salt, pepper and red chili pepper (I always use a paste that you can buy at the grocery store, but otherwise you can also use a normal red chili pepper.) Stir well and fill the eggs with the avocado mix.
