Tasty homemade spinach soup with a fancy way of dressing it up. 🙂 Also the addition of eggs and smoked salmon makes this dish a little bit more special. If you want to make a vegetarian dish, you can just leave out the salmon.
Ingredients for 2 liter soup:
- 600 gr spinach
- 1 onion
- 1 clove of garlic
- ½ lemon
- 2 eggs
- 100 gr salmon
- pepper
- 1 liter of vegetable broth
- 2 tablespoons of cooking cream
How to prepare it:
Peel and fine slice the onion, peel the garlic, cut the garlic in half and remove the rook. Chop the spinach. Put a soup pan on the stove. Add a bit of olive oil and heat it up. Add the onion and garlic once the oil is hot and fry them for a minute before adding the spinach. Let the spinach shrink. Add a bit of pepper and the lemon juice.
In the meantime, you can boil the eggs, for this dish I boil them for about 10 minutes. Rinse them down with cold water when they are done.
Add the vegetable broth to the spinach and get the soup to a boiling point, let it simmer for 5 minutes. Cut the salmon into small pieces and cut the eggs in small slices.
Use your food processor to chop the spinach and create a smooth soup.
Start prepping the plates, put a bit of salmon, an egg and a tablespoon of cooking cream in each plate.
Taste the soup and add a bit of salt and pepper if needed.
Poor the soup into the plates and serve immediately,
