Delicious dessert! Perfect for, for example a nice Christmas dinner! Small note, it needs to freeze for at least 3 hours, so you need to plan some time for this.

Ingredients for 2 pers.:

  • 3 gelatin leaves
  • 5 cl Amaretto
  • 2 eggs
  • 300 ml unwhipped whip cream
  • 100 gr sugar
  • 500 gr almond cookies
  • 10 gr grated chocolats

How to prepare it:

Start by dividing the eggs. Save both the yolk as well as the egg-white. Put the egg-white aside for a moment. Put the yolk in a mixing bowl.

Soak the gelatin leaves in a bowl with luke warm water. Chop half of the amaretto cookies.

Put a small pan on the stove, add half of the cream and slowly heat up the cream. Drain the gelatin leaves and add them to the cream, let the gelatin leaves evaporate.

Add the chopped cookies to the cream, stir once more and remove the pan of the stove to let it cool down.

Mix the yolk with the sugar until you have a smooth sauce. Add the Amaretto and stir once more, slowly add the cooled down cream sauce whilst stirring.

Take the remainder of the cream and mix until it turns semi whipped. Mix the egg-white till it is completely whipped. Stir the whipped cream through the amaretto mixture, do the same for the egg-white.

Use a baking tray for a cake, cover the bottom and sides with some cooking foil. This helps you to get the parfait out easily. Put the mixture in the baking tray and put it in the freezer for at least 3 hours.

Upon serving:

Cut the remainder of the cookies into slim slices and grate the chocolate. Cut the parfait into slices and serve with some cookies and the chocolate grates.
