Finally!! The asparagus are back in season again! I’m a huge fan! Preferably I’ll eat them in the most traditional way; boiled with nutmeg, dairy butter, eggs, potatoes and smoked salmon (or ham for my boyfriend) or otherwise as a creamy sou

People are always laughing at me when I’m eating asparagus, because I always try to combine all of the above ingredients in one bite, so actually with every bite I’m trying to build a little asparagus-pie. A piece of asparagus, a slice of salmon wrapped around it, a piece of potato and a little bit of egg salad. Tastes like heaven! But apparently very strange, I don’t really care it’s the best way to eat asparagus!

Delicious, honesty whilst writing I actually cannot wait eating them again. Gotta run to the farm for the next badge this week! And the best thing; they also have fresh strawberries. So that means we are double lucky; asparagus and strawberries with whipped cream; the ultimate spring dish!

Ingredients for 4 pers.:

  • 2.5 kg asparagus
  • 8 medium sized potatoes
  • 8 eggs
  • 200 gr smoked salmon
  • 200 gr smoked ham
  • 50 gr salted dairy butter
  • nutmeg
  • fresh parsley
  • 2 table spoons of mayonnaise
  • salt and pepper

How to prepare it:

Asparagus are easily overcooked, the secret is to boil them shortly and keep them in the hot water for another 10 min. This way they’ll slowly get rare but keep their bite. Nowadays you can buy your asparagus shelled or still in its skin. There is usually no change in quality as long as the asparagus are laid down in water and of course it’s a lot easier since you don’t need to peel the skin of yourself. If you do need to peel the skin of the best way to do this is with a special peeler. Cut of the bottom of the asparagus and peel them with the peeler. Put them in a large pan, large enough so that they can lay down flat, with some water.

Start by boiling the eggs. Boil them 9 minutes so that they are almost hard boiled.

Peel the potatoes and put them in a pan with water. Put the pan on the stove and boil the potatoes for 12 minutes (or a little bit more if they are really firm)

Put the asparagus on the stove as well. Once the water boils, let them boil for 5 minutes. After that you turn off the stove but you leave the asparagus in the hot water for another 10 minutes with the lid on top.

Once the eggs are done; rinse them with cold water. Peel of the skin and put them in a bowl. Mash the eggs with a fork, add the mayonnaise, some pepper and some salt and stir well until you’ll have a nice egg salad. Chop the parsley and add a bit of it to the egg salad. The rest we will use for the asparagus.

Roll up both the salmon and the ham until you’ve got some nice rolls, put them nicely on the plates.

Put a small pan on the stove to melt the butter.

Rinse down the potatoes and the asparagus. We will now garnish the plates.

Put the asparagus on the plate next to the salmon and het ham, add two potatoes and a nice bowl of egg salad. Poor some melted butter on top of the asparagus and the potatoes. Grate some nutmeg over the asparagus and finish off with some parsley.
