The weather is great, time to braai! This is a non-standard side dish for the BBQ. A portobello filled with couscous, sundried tomatoes, pesto and mozzarella. Delicious BBQ side- or main vegetarian dish!

Ingredients for 2 pers.:

  • 2 portobellos
  • 100 g couscous
  • 1 mozzarella
  • 3 sundried tomatoes
  • 2 tablespoons of pesto

How to prepare it:

Bring water to the boil for the couscous. Put the couscous with the boiling water in a mixing bowl. As soon as the couscous is ready, add the pesto and stir well. Cut the sun tomatoes into small pieces and stir them through the couscous. Also cut the mozzarella into small pieces and stir it through the couscous.

Clean the portobellos, remove the stalks and the seed lists and fill the portobellos with the portobello’s couscous. Place the portobellos on a greased (olive oil) sheet of aluminum foil on the hot BBQ and bake until the portobellos are well done.

Serve right away.
