Fresh figs, you can only get them for a small period of time during the year in the Netherlands. So whenever I get the opportunity I take the chance to get them. Actually planning to plant my own fig tree in the garden, now that I have a garden. 🙂 De combination of balsamico and fresh figs is well known. I’ve just added some cheese and almonds. The cheese will give a bit of a savory taste to the entire combination but because brie is not a real heavy cheese the tartlet remains airy. By wrapping the tartlet into some filo pastry the flavours are well kept and the cheese won’t get too dry. This is a perfect lunch dish or a small starter.

Ingredients for 4 pers.:

  • 1 piece of brie
  • 1 fresh fig
  • 4 sheets of filo pastry
  • almonds
  • balsamico syrup
  • 1 egg

How to prepare it:

Pre-heat the oven to 200 degrees.

Cut the brie into thin slices. Chop the almonds

I used small oven dishes to make the tartlets but you can also use the filo pastry as a small bag and serve without a dish.

Lay the filo pastry on your counter. Put some brie slices on the bottom. Put some fig slices on top of the brie. Sprinkle a bit of the chopped almonds on top. Finish off with a sip of the balsamico syrup.

Fold the filo pastry so that it covers the ingredients. Split the yolk from the egg white (see tip). Use a bit of the yolk to grease the top of the tartlets.

Put the tartlets into the oven for 12 minutes.
