Starter with brie and mushrooms baked in the grill. The combination of brie and wild mushrooms with the herbs kind of remind me of a wild forest. the red chili adds a bit of spice and therefore it’s a very tasty, non boring starter!

Ingredients for 4 starters.:

  • 1 piece of brie (200 gr)
  • 200 gr mushrooms
  • fresh parsley
  • fresh thyme
  • 1/2 red chili pepper
  • olive oil

How to prepare it:

Put some olive oil in a small bowl, crush the garlic and add the crushed garlic to the oil. Set it aside so that the garlic can really get into the olive oil. I always take out the middle part of the garlic (the root) since your body cannot process it, what leads to some of the smell the next day.

In the meantime, you can start chopping the mushrooms into small blocks.

Cut the chili pepper in half and take out the seeds. Chop the chili pepper, thyme and parsley. Keep some thyme on the side for decoration. Put a pan on the stove and add the olive oil. Add the chili pepper, thyme and parsley. Fritter the herbs for a minute before adding the mushrooms.  Let the mushrooms bake for about 5 minutes.

Cut the brie into thin slices. Put the mushrooms into small 1 person oven dishes and cover with the slices of brie.

Finish off with a bit of thyme.

Put the dishes in the oven for about 10-15 minutes till the brie has melted. Serve immediately now that the brie is still soft.
