Delicious bad weather comfortfood coming up!! Lovely platter with shrimps, fresh fish, broccoli and potatoes in a smooth saffron sauce!

Ingredients for 2 pers.:

  • 6 large potatoes
  • 1 broccoli
  • 200 gr large shrimps
  • 250 gr panga filets
  • 1 lime
  • 100 ml white wine
  • 100 ml cooking cream
  • 100 ml fish stock
  • 1 tablespoon mustard
  • 1 onion
  • 1 clove of garlic
  • 100 ml milk
  • chili flakes
  • salt and pepper
  • saffron

How to prepare it:

Preheat your oven to 200 degrees.

Peel the potatoes and cut into smaller cubes. Add water and bring the potatoes to a boiling point. Let them boil for about 12 minutes.

Grate the zest of the lime. Peel the garlic and cut it over half, remove the root. Place the saffron threads in a small layer of boiling water. Peel the onion and chop it.

Slice the roses of the broccoli and put it in a pan, fill it with water and bring to a boil. Let it briefly cook. Cut the panga filets into bite-sized pieces. Lubricate a baking dish with some butter or oil. Place the fish and the shrimp. Sprinkle some salt and pepper over it.

Put a saucepan on the fire. Melt a bit of butter. Add once the butter is hot the onion, the lime grater, some chili flakes and squeeze the garlic in the pan. Bake on high heat for 2 minutes, now extinguish with the white wine, let the wine evaporate and add the saffron. Now add the fish stock and the cooking cream and bring it to a boil. Allow to cook for 5 minutes. Pay attention so it does not boil over.

Meanwhile, pour off the broccoli and divide it over the fish. Also pour the potatoes and finely mash them into a soft puree, pour some milk into it to make it creamy. Bring it to taste with some salt and pepper.

 

Meanwhile, remove the sauce from the fire and strain it. Pour the sieved sauce over the broccoli and fish. Cover everything now with a layer of puree. Put everything in the oven for 30 minutes.
