Bruchettas are always a good snack, I noticed that people always love them. Freshly baked bread with different toppings. And they are too easy to make! You can literally put everything on top! The good thing is that you can prep them before the party starts and just finish it off after you’ve arrived. Another thing; there is nobody who can not like it, as you can combine all different tastes and flavours! During last Christmas I came up with a new recipe for bruchettas; bruchettas with wild mushrooms and cottage cheese. It’s a bit spicy and the taste is completely different from the other bruchettas I’ve already posted. My boyfriend called it the real forest taste….I can only assume that was a compliment 😉

Ingredients for bruschettas from 1 ciabatta:

  • 1 ciabatta bread
  • 250 gr of wild mushrooms
  • ½ red chili pepper
  • 2 twigs of fresh thyme
  • 1 clove of garlic
  • 2 twigs of parsley
  • 100 ml cottage cheese
  • olive oil

How to prepare it:

Start by baking the bread in the oven based on the instructions of the package. Have it cooled down and once it’s cold enough cut it into nice slim slices. Put the slices on a griddle.

Put some olive oil in a small bowl, add crushed garlic of ½ garlic clove and set it aside so the garlic can really get into the olive oil. I always take out the middle part of the garlic (the root) since your body cannot process it, what leads to some of the smell the next day.

Use the oil with garlic to grease the bread slices. Make sure you cover all of them and put them under the grill for about 2 minutes until they have a very nice light brown glance, they should be somewhat soft on the bottom and nice and crispy on the top. Be careful you don’t grill the bread too long, they turn black in a blink of an eye!

In the meantime you can start chopping the mushrooms into small blocks. Make sure you keep your eye on the breads and take them out once they are ready. They don’t need to stay warm so it’s ok if they cool down a bit.

Cut the chili pepper in half and take out the seeds. Chop the chili pepper, thyme and parsley. Keep some parsley on the side for decoration. Put a pan on the stove and add some olive oil. Squeeze the rest of the garlic into the pan and add the chili pepper, thyme and parsley. Fritter the herbs for a minute before adding the mushrooms. Let the mushrooms bake for about 5 minutes. Once they are ready you can put the mushroom mix on top of the breads. Add a spoon of cottage cheese and garnish with some fresh parsley.
