Ingredients for 2 pers.:

  • 2 chicken legs
  • 100 g bacon
  • 3 apples
  • 1 onion
  • fresh parsley
  • 330 ml cider
  • 150 g dried soft plums
  • 1 lemon
  • 1 tablespoon mustard
  • 100 ml cooking cream
  • salt and pepper

How to prepare it:

Finely chop the onion. Put some butter in a large casserole and add the onion once the butter has melted. Fry the onion for about 2 minutes. Season the chicken on both sides with some salt and pepper and fry for a moment.

Remove the chicken from the casserole and add the bacon to the onion. Bake for about 5 minutes. Now put the chicken back in the pan on top of the onion and bacon. Pour the cider in the casserole and bring to the boil. Let everything simmer with the lid on the pan for an hour and 15 minutes. After half an hour, add the plums.

Start peeling the apple after about an hour. Cut the apple into slices and fry it in a frying pan until they soften. Finely chop the parsley. Grate the zest of the lemon and squeeze out the lemon juice. Remove the chicken from the pan and keep it warm. Let the cooking liquid boil well until there is about 1/4 left.

Now add the mustard, cooking cream and lemon juice to the cooking liquid. Bring back to the boil. Also add most of the apples. Stir well and cook for another minute.

Now place the sauce with the apples and plums in a serving dish. Place the chicken on top, place the apple wedges over it and sprinkle with the lemon zest and parsley. Enjoy!
