Delicious, homemade chicken soup almost like your granny used to make it. You would almost want to be sick to be able to eat this!

Ingredients for 2 liter soup:

  • 2 chicken legs
  • 1 leek
  • 3 carrots
  • 1 onion
  • 1 clove of garlic
  • bay leaf
  • thyme
  • 1.5 l chicken broth
  • vermicelli
  • oregano
  • salt and pepper

How to prepare it:

Put a large soup pan on the stove, add a bit of butter. Cut the chicken legs in half so that you are left with a chicken leg and a chicken bolt. Sprinkle salt and pepper on top and put the chicken in the pan as soon as the butter is hot. Fry the chicken for 5 minutes on both sides.

Peel and fine slice the onion. Peel the garlic and cut it in half, remove the root. Grate the carrots and cut them into rings. Clean the leek and chop the leek into thin rings.

Add the onion, the leek, the bay leave, a good amount of oregano and thyme and some salt and pepper to the chicken. Squeeze the garlic out in the pan as well. Heat up the stove and fry the mixture for about 5 minutes whilst stirring. Add 1.5 l of chicken broth, bring the soup to a boiling point and let it boil for about 15 min.

Add the carrots and boil the soup for another 10 minutes. Take out the pieces of chicken. And add the vermicelli to the soup. Bring the soup back to a boiling point.

Cut (if correct, you do not need to cut but the meat will be so soft it will fall of the bones) the chicken meat of the bones and add the meat to the soup. Taste the soup and add some additional herbs if needed.

Serve the soup in a nice soup bowl.
