While it’s cold and chilly outside, we have to lighten things up a bit. It’s time for chicken in Mediterranean style!

Ingredients for 4 pers.:

  • 4 chicken fillets
  • 250 ml passata di Pomodoro
  • 1 mozzarella
  • a handful pine nuts
  • 1 clove of garlic
  • 2 twigs of parsley
  • 2 twigs of fresh thyme
  • salt and pepper

How to prepare it:

Heat up the oven to 200 degrees.

Chop the parsley and thyme and put them in a bowl. Add the passata. Take the skin off the garlic and remove the root. Squeeze the garlic on top of the bowl and stir all the ingredients.
Prepare a (fire resistant) dish which is big enough to fit in all the chicken fillets next to each other. Grease the dish with some olive oil. Clean the chicken fillets and put them flat on the bottom of the dish. Sprinkle some salt and pepper on top of the chicken. Spread some tomato sauce on top of the chicken. Make sure that the sauce is covering the entire top of the chicken.

Cut the mozzarella in thin slices and put them on top of the chicken and tomato sauce. Chop the pine nuts (just a bit) and sprinkle them on top of the mozzarella. Finish with some pepper.

Put the chicken in the oven for 20 minutes.
