Lovely salad that is a bit bitter but the truffle dressing works really well with that. This side salad fits perfectly with this vegetarian Christmas dish: Vegetarian Wellington

Ingredients for 2 pers.:

  • 1 stump chicory
  • 50 gr lamb’s lettuce
  • olive oil
  • red wine vinegar
  • 1 tsp truffle salsa
  • salt and pepper
  • 1 tbsp mustard
  • pine nuts

How to prepare it:

In a small bowl, mix some olive oil, red wine vinegar, the truffle salsa, some salt and pepper and the mustard until smooth. Wash the lettuce and cut the chicory about half. Remove the core.

Place the chicory on the plate, spread some lettuce over it. Drizzle some of the dressing over it and finish with some pine nuts.
