Airy chocolate mousse with passion fruit. The passion fruit gives a bit of a kick to the dish that I personally really like. It’s an unexpected combination that takes away the ‘heaviness’ of the chocolate mousse. You can prepare this dessert up to 2 days in advance.

Ingredients for 4 pers.:

  • 150 gr chocolate
  • 250 ml whip cream
  • 1 bag vanilla sugar
  • 2 passion fruits
  • fresh mint

How to prepare it:

Put a pan with water on the stove, add a mixing bowl, so that is hanging with its bottom in the water. Make sure that the water doesn’t boils. Break the chocolate into small pieces and put them in the bowl. Let the chocolate melt slowly (au bain-marie).

Take the melted chocolate of the stove. Add the vanilla sugar and stir well. Have the chocolate cool down a bit.

Use a hand mixer to whip the cream, make sure it thickens but only mix for a max of 30 seconds to 1 minute. Add the melted chocolate and whip the cream again till small spikes form. Put the mousse into your serving glasses or dishes and put it in the fridge for at least 2 hours.

Take the dishes out of the fridge just before serving. Cut open the passion fruits, take out the seeds and add them on top of the chocolate. Finish off with a mint leave.
