Ingredients for 4 pers.:

  • 600 gr cod
  • 1 jar of black olives without the seeds
  • olive oil
  • 1 red onion
  • fresh parsley
  • fresh chives
  • 1 lemon
  • pepper
  • 1 l fish stock
  • fresh basil

How to prepare it:

Drain down the fluid from the olives and put them in a jar that you use when using your blender. Mash the olives in your blender until it forms a nice and soft paste. Peel, trim and fine slice the onion. Chop the parsley and the chives. Grate the skin of the lemon. Add the onion, parsley, chives, lemon skin and pepper to the olive paste. Stir well. Add a bit of olive oil to make the spread a bit smoother.

Put a frying pan with a thick bottom on the stove. Heat up the fish stock until it is boiling. Sprinkle some salt and pepper on the cod. Put the cod into the boiling stock. The cod needs to poach for about 8 to 10 minutes depending on the thickness of the fish.

Decorate the plates with a layer of the olive paste. Put the cod on top and garnish with some basil.
