Healthy fish dish :). I prefer cooking with fish vs meat because even a stew is usually done very quickly and easy. This is a quick but very tasty and healthy fish stew with a couscous filled with herbs. Enjoy!

Ingredients for 2 pers.:

  • 2 cod fillets
  • 150 g couscous
  • 1 yellow bell pepper
  • 1 tin diced tomatoes
  • 1 lime
  • 1 onion
  • 1 garlic clove
  • 250 ml vegetable stock
  • fresh thyme
  • fresh parsley
  • fresh basil
  • 2 tablespoons black olives
  • olive oil
  • salt and pepper

How to prepare it:

Peel and chop the onion. Peel the garlic, cut it over half and remove the root. Grate the zest of the lime and finely chop it, squeeze out the lime. Finely chop the fresh herbs.

Cut the peppers into small cubes. Put a casserole on the fire. Add a good drizzle of olive oil. As soon as the oil is hot, add the onion, the finely chopped thyme and paprika. Bake for 5 minutes. Now add the diced tomatoes, the lime juice, some (half) parsley and a bit of salt and pepper. Squeeze the garlic out to the paprika-tomato mix. Bring to the boil. Cook for 2 minutes and place the cod fillets gently on the sauce.

Now bring 250 ml of water to the boil for the vegetable stock. Prepare the couscous with the vegetable stock according to the description of the packaging. Also add the remaining herbs and the zest of the lime. Leave the couscous for a moment.

Serve the cod with the vegetables and couscous.
