Lovely and easy oven package with fresh cod and couscous. Couscous is really easy to make and really healthy. This version fits perfectly to a nice piece of fish.

Ingredients for 2 pers.:

  • 2 pieces of cod
  • 200 gr couscous
  • ½ zucchini
  • 75 gr cherry tomatoes
  • 1 spring onion
  • 300 ml fish broth
  • 1 lemon
  • fresh dill
  • salt and pepper
  • olive oil

How to prepare it:

Pre-heat your oven to 200 degrees.

Cut the zucchini in small blocks. Chop the dill. Cut the cherry tomatoes in quarters. Bring the fish broth to a boiling point. Dry the cod and season it with some salt and pepper. Chop the spring onion. Grate the skin of the lemon.

Place a small baking pan on the stove. Add a bit of olive oil and once the oil is hot you can start frying the zucchini. Add the spring onion and the tomatoes after a couple of minutes and fry for another 2 minutes.

Pour the fish broth with the couscous, leave on the side to fluff up. Add the vegetables and the chopped dill (leave a bit for later) to the couscous when it is ready and stir well.

Place a baking paper on your counter top. Add half of the couscous, flatten it slightly and place one of the cod pieces on top. Finish with some dill and the lemon grates.

Close the baking paper and place the package into the oven for 15-20 minutes.
