I’ve had a crazy week and it’s not over yet. The company is moving to a new building and the actual move is finally taking place but this means a lot of work! Unfortunately this also meant that I didn’t have any time to blog or cook! But yesterday I did find the time to cook a nice, easy and very tasteful salad! You should definitely make it, if only for the beautiful way the salad looks!

Ingredients for 4 pers.:

  • 2 oranges
  • 1 avocado
  • 1/2 pomegranate
  • 50 gr feta
  • 5 leaves of fresh mint
  • olive oil
  • pepper

How to prepare it:

Peel the skin of the oranges, cut them into thin, round slices. Put the slices on the serving dish. Keep one slice separately. Cut the avocado in half, peel of the skin and take out the root. Cut both half’s into thin slices and put the slices on top of the oranges. Squeeze out the juice of the orange slice onto the avocado.

Cut the pomegranate in half and use the back of a spoon and bang against the pomegranate to take out the seeds. Sprinkle the seeds on top of the salad. Crumble the feta on top. Chop the mint into small pieces and put them on top of the salad as well. Finally, add some pepper and olive oil.
