Typical French stew under the Comfort Food category! It’s not hard to make, yes, it does require a bit of attention but it is not difficult. And when you are making this, just remember it needs to simmer for an hour, so it does take a bit of time. But that is definitely worth it!

Ingredients for 4 pers.:

  • 500 gr chicken legs
  • 2 cloves of garlic
  • 2 laurel leaves
  • 125 gr bacon
  • 150 gr mushrooms
  • 3 carrots
  • 1 jar of pickled onions
  • 2 tablespoons of flour
  • 500 ml red wine
  • 500 ml chicken broth
  • Fresh herbs (thyme, sage, rosemary, oregano)
  • Fresh parsley
  • Salt and pepper

How to prepare it:

Take the chicken legs and grease them with a bit of salt, pepper and flour. Put a large pan on the stove. Add a bit of butter. Add the bacon and fry them for 3 minutes before adding the chicken. Fry the chicken on all sides for a couple of minutes.

Clean the carrots and cut them into somewhat thicker slices. Peel the garlic, cut it in half and remove the root. Squeeze the garlic with the chicken. Add the carrot to the chicken as well. Fry for a couple of minutes and stir occasionally. Prep the chicken broth.

Cut the mushrooms in quarters and put them in a baking pan with some oil. Fry the mushrooms for 10 minutes.

Rinse the pickled onions. Add the onions, mushrooms, laurel leaves and other herbs to the chicken. Add the wine and the chicken broth as well.

Heat up the stove until the chicken is boiling. Turn the stove down slightly and let the whole dish simmer for about 1 hour. Serve with a mash or just bread since this fits best with the sauce.
