Shrimps, coquilles and saffron, three amazing tasty ingredients and a perfect match to cook with but more important to eat! This dish doesn’t have too many additions but keeps the flavours pure.

Ingredients for 4 pers.:

  • 12 coquilles
  • 50 gr pink shrimps
  • 1 red onion
  • 150 ml cooking cream
  • 100 ml white wine
  • 100 ml fish broth
  • saffron
  • fresh basil
  • salt and pepper

How to prepare it:

Put the saffron in a small layer of hot water and let them lay for a moment. Put a grilling pan and a small sauce pan on the stove.

Peel the onion and trim and fine slice the onion. Put a bit of butter in the sauce pan and let it melt. Add the onion and the saffron to the butter. Fry the onion for 2 minutes. After 2 minutes, you can add the white wine. Let the wine boil down. Add the cooking cream and the fish broth and let it boil for another 5 minutes.

Dry the coquilles with a cloth. Put the grilling pan on the stove and heat it up. Sprinkle some salt and pepper on top. Once the pan is hot you can add the coquilles. Fry the coquilles on each side for 3 to 4 minutes, turn them carefully.

Sift the sauce to filter out the onion. Chop the basil.

Put the coquilles on a plate, put the shrimps in between and sprinkle the sauce on top. Finish off with some basil leaves.
