Lovely couscous salad with mushrooms, spinach and shaved almonds. Easy to create and very tasty.

Ingredients for 2 pers.:

  • 150 g couscous
  • 3 eggs
  • 1 lemon
  • 200 g spinach
  • 150 g mushrooms
  • almond shavings
  • salt and pepper
  • 300 ml vegetable stock

How to prepare it:

Cut the mushrooms into quarters. Grate the zest of the lemon. Finely chop the spinach.

Put a frying pan with butter on the heat and bring water to a boil for the couscous and eggs.

Prepare the couscous with the vegetable broth. And cook the eggs for 8 minutes.

As soon as the butter has melted, add the mushrooms and lemon zest and fry for 10 minutes. Now add the spinach. Also add the couscous and stir well.

Drain the eggs, peel them and cut them into wedges. Serve the couscous with the eggs and sprinkle some pepper and almond shavings over it.
