Ingredients for 2 pers.:

  • 150 gr couscous
  • 100 gr smoked salmon
  • 1 avocado
  • 2 oranges
  • fresh basil
  • olive oil
  • salt and pepper
  • 70 gr cottage cheese

How to prepare it:

Boil 250 ml of water. Put the couscous into a bowl and pour the boiling water on top. Cover the top and leave the couscous for 5 minutes to swell up and absorb the water.

Peel the oranges, keep one half of a orange separately. Cut the rest of the oranges in thin slices and after that in quarters. Peel the avocado and cut it in half, remove the seed and slice the avocado in thin bite sized pieces. Slice the salmon in small pieces as well.

Chop the basil. Put some olive oil, the juice of half of the orange, some salt and pepper and the copped basil in a mixing bowl and stir well. Stir the sauce through the couscous. Add the orange pieces, the avocado and the smoked salmon. Stir everything well.

Finish off with some cottage cheese on top.
