Surprising couscous salad with smooth burrata, a soft Italian cheese made of mozzarella with cream. The pomegranate provides a fresh flavours and the combination of the soft burrata, grilled avocado and balsamic syrup is delicious.

Ingredients for 2 pers.:

  • 1 pomegranate
  • 1 burrata
  • balsamic syrup
  • salt and pepper
  • olive oil
  • white wine vinegar
  • 1 avocado
  • fresh basil
  • 150 gr couscous

How to prepare it:

Boil 200 ml of water. Meanwhile, heat up your grilling plate. Cut the avocado into thin slices and grill on both sides until a nice grill structure is created.

Pour the water at the couscous and wait until the water is absorbed. Remove the pomegranate seeds from the pomegranate. The easiest way to do this is to cut the pomegranate in half and spank it with the back of a spoon. Be mindful of your clothes as it can splash.

Put a dash of olive oil, some pepper and salt and some vinegar in a large bowl and stir well. Add the pomegranate seeds and the couscous. Stir everything well. Finely chop the basil. Put the couscous in a serving bowl, place the avocado on it and place the burrata in the middle. Sprinkle some pepper, the fresh basil, balsamic syrup and olive oil over the burrata.
