1 of multi-ways to make quesadilla’s! Quesadilla’s are quick and easy to make but also delicious and a great dinner when it is hot or you just don’t have much time for cooking.

Ingredients for 2 pers.:
- 4 wraps
- 150 g mushrooms
- 2 tablespoons herb cheese
- fresh spinach
- 1 onion
- grated mozzarella cheese
- olive oil
- 2 tomatoes
- white wine vinegar
- salt and pepper
- fresh basil
How to prepare it:
Cut the mushrooms into thin slices. Put a frying pan on the heat. Heat some oil and add the mushrooms. Bake for about 10 minutes, then add 2 tablespoons herb cheese. Melt the cheese and remove the pan from the heat.
Lay the wrap on your grill (or in a clean frying pan), spread some mushroom mixture over the wrap, start in the middle and keep a border at the ends. Sprinkle some cheese and spinach over it. Place a second wrap over the first and close the grill. Grill for about 8 minutes. If you fry the quesadilla in a pan, place a pan lid that is slightly smaller than the pan on the wraps. Now you bake the quesadilla for 8 minutes.
Now make the tomato salsa. Peel and chop the onion. Cut the tomatoes open and remove the seeds. Put the tomatoes and onion in a bowl with some olive oil, white wine vinegar, salt, and pepper. Stir well.
Finely chop the basil and stir it through.
Serve the quesadilla with the tomato salsa.
