Easy to make fish dish. Perfect for a regular evening or to brag with during a nice dinner. Since it’s easy to make and quickly done it is perfect if you do not want to spend to much time in the kitchen but do want to serve something nice and special.

Ingredients for 2 pers.:

  • 200 gr shrimps
  • 200 gr salmon
  • 200 gr panga fillet
  • 1 onion
  • 1 zucchini
  • ½ jar of black olives
  • 250 ml cooking cream
  • 150 ml fish bouillon
  • Fresh parsley
  • Pepper

How to prepare it:

Start by, if needed, to peel of the skin of the shrimps. Cut the rest of the fish in bite-sized pieces. Peel and fine slice the onion.

Cut the zucchini in thin slices and cut them in quarters. Rinse the olives and cut them in thin rings. Chop the parsley.

Put your tajine (or pan) on the stove. Add some olive oil and heat it up. Once the oil is hot, the onion. Fry the onion for 2 minutes. Add the zucchini and fry for another 5 minutes. Add the cooking cream and bouillon. Add a bit of pepper as well. Stir everything and have it boil for 5 minutes.

Put the fish, the olives and the parsley in the tajine. Cook it for 10 minutes until the fish is well done.

The sauce of the stew is really good so I always combine the stew with a fresh pasta or mash potatoes.
