Ingredients for 2 pers.:

  • 50 g spiced biscuits
  • 50 g sugar
  • 6 egg yolks
  • 125 ml milk
  • 125 ml whipped cream
  • 1 vanilla pod
  • 2 tablespoons brown sugar

How to prepare it:

Preheat the oven to 90 degrees.

Put a saucepan on the heat and add the milk and whipped cream. Cut open the vanilla pod and remove the marrow, add the marrow, and stick to the cream in the pan. Let the whole thing get whole. Meanwhile, mash the spiced biscuits finely, for example in a mortar. Add the fine spiced biscuits and bring to the boil. Stir well and remove from the heat as soon as the substance thickens.

Now mix the sugar and egg yolks together (keep the brown sugar separate) and pour in the cream mixture, remove the vanilla pod. Stir well and pour the mixture into ovenproof bowls. Put the bowls in the oven for 1 hour and leave to cool. You can prepare the dessert well in advance until this step.

Just before serving, sprinkle the brown sugar over the desserts and melt the sugar with a small gas burner just to create a nice thin layer of melted sugar. Serve the desserts with a small, spiced biscuit.
