Easy oven dish with fresh, crispy fish on a smooth spinach and tomato mixture.

Ingredients for 2 pers.:

  • 2 pangasius fillets
  • 300g spinach
  • 150 ml cooking cream
  • 2 tomatoes
  • 1/2 red pepper
  • fresh parsley
  • 1 lime
  • 1 garlic clove
  • 100g breadcrumbs
  • salt and pepper

How to prepare it:

Preheat the oven to 220 degrees.

Put a frying pan on the stove, let the spinach dwindle in it. Meanwhile, peel the garlic, cut it in half and remove the root. Cut the red pepper over half as well. Remove the seeds and finely chop the pepper. Squeeze the garlic into the spinach, also add the red pepper.

Grate the skin of the lime. Add the grated lime zest and cream to the spinach and bring to the boil. Cook for 5 minutes.

Then pour the spinach mixture into an ovenproof dish. Cut the tomato over half, remove the seeds and cut thin strips from the tomato. Place it over the spinach mixture.

Place the pangasius fillets on the tomatoes. Finely chop the parsley. Squeeze the lime. Stir the parsley with some pepper and lime juice into the breadcrumbs. Think of the top of the pangasius fillets with the breadcrumb mixture. Place the dish in the oven for 20 minutes.
