Quick salmon and curly endive stir-fry. In the Netherlands endive is a typical mash vegetable but it fits really well in a stir-fry as well. Just a little change 🙂

Ingredients for 2 pers.:

  • 250 g smoked salmon
  • 250 gr curly endive
  • almond shavings
  • fresh ginger
  • 1 lime
  • 1 garlic clove
  • soy sauce
  • 5 spices
  • salt and pepper
  • 150 g rice
  • 200 ml stock

How to prepare it:

Cut the salmon coarsely. Rasp the zest of the lime. Peel the ginger. Peel the garlic, cut it over half and remove the root. Finely chop the endive.

Cook the rice according to the package.

Put a large frying pan on the heat. Heat some oil in here. Add the endive. Add the stock, a good dash of soy sauce and a spoonful of 5 spices.  Squeeze the garlic and add the grated ginger as well. Stir well.

Meanwhile, fry the salmon in a separate pan with the lime zest and a little lime juice.

Bring everything together on the board. Start with a layer of rice, then the endive stir-fry and finally the salmon. Sprinkle some almond shavings over it.
