Poaching eggs…. it has been the challenge of my cooking life! I have been struggling so much and using all different tactics, but now I finally found one that worked for me. Wrapping the eggs into a bit of cooking foil!!! It’s a bit of practice to find out how hard the water should boil and how long to keep the eggs in but after you found this out! It will work every time! Enjoy cooking and brunching this Easter! Happy Easter!!

Ingredients for 2 pers.:

  • 1 avocado
  • 2 eggs
  • 2 oven baked breads
  • salt and pepper
  • olive oil
  • Small clove of garlic
  • 1 lemon
  • powdered chili
  • fresh parsley

How to prepare it:

Put a grilling pan / plate on the stove to heat up. And put a small cooking pan with some water in it on the stove. Heat up the water but do not let it boil

Peel the garlic, cut it in half, remove the root and squeeze out the garlic in the olive oil. Cut the bread in half and grease the inside with a bit of the oil/garlic mixture. Put the breads on the grill.

Put two small bowls on the countertop. Cover them with some cooking foil. Break the eggs into the foil and knot them. Put the eggs gently in the water and poach them for 5-6 minutes.

In the meantime, you can mash the avocado. Squeeze out the lemon juice and add it to the avocado mash. Use some salt, pepper and powdered chili to flavour the avocado mash. Chop the parsley.

Now we are ready to make up the plate. Put the grilled bread on the plate and grease it in with the avocado mash, unwrap the egg and put the poached egg on top of the avocado. Sprinkle a bit of salt, pepper and parsley on top. Put the top of the bread on top of all this. Enjoy!!!
