Traybakes are the best, easy to make after a hard working day and very tasty!! This traybake combines fresh salmon and fennel with a saffron mayonnaise. Yum!!

Ingredients for 2 pers.:

  • 2 salmon fillets with skin
  • 250 g potatoes
  • 1 red onion
  • 1 fennel
  • 1 zucchini
  • saffron-aïoli
  • pine nuts

How to prepare it:

Preheat the oven to 200 degrees. Clean the potatoes and put them on the fire with a good layer of water. Bring to the boil and cook for 5 minutes. Then drain the potatoes.

Clean the fennel and cut it into wide strips. Set the green aside.

Place a baking paper on a large oven tray. Divide the onion, potatoes, and fennel over it. Drizzle some olive oil, pepper, and sea salt over it. Place the tray in the oven for 15 minutes. Cut the zucchini into thick slices.

Remove the tray from the oven and add the zucchini and salmon to the tray. Drizzle over it again with some olive oil, pepper, and sea salt. Put back in the oven for another 15 minutes.

Remove the tray from the oven, sprinkle some pine nuts and the green of the fennel over it. Very tasty with a saffron-aïoli. Enjoy!
