Super nice vegetarian side dish. Tomatoes, eggplant and mozzarella already proved to be a super good combination and this dish is a very good example. If you double the ingredients you can also eat it as main course.

Ingredients for 2 pers.:

  • 1 eggplant
  • 3 tomatoes
  • 1/2 red onion
  • 1 clove of garlic
  • fresh parsley
  • fresh basil
  • 1 mozzarella
  • salt and pepper
  • olive oil

How to prepare it:

Pre-heat your oven to 180 degrees.

Wash the eggplant and the tomatoes. Cut the eggplant into thin, round slices. Put them into a round oven dish. Sprinkle some olive oil on top and put the eggplant in the oven for 10 minutes.  In the meantime you can prepare the tomato salsa. Cut the tomatoes, remove the seeds and cut the tomatoes into tiny blocks. Put the tomato blocks into a small cup. Peel and fine slice the onion. Peel the garlic, cut it in half and remove the root. Squeeze the garlic and add it together with the onion to the tomatoes.

Chop the parsley and the basil. Add the herbs and a bit of olive oil to the tomatoes. Add a bit of olive oil and stir well.

Pull pieces of the mozzarella and out hem on top of the dish.

Put the vegetable dish into the oven for 20 minutes.
