Homemade soup of fennel and fresh asparagus. easy to make and lovely seasonal soup!

Ingredients for 2 pers.:

  • 500 g white asparagus
  • 200 g green asparagus
  • 1 fennel
  • 1 onion
  • anise seed
  • pepper
  • 1.5 l vegetable stock
  • fresh chives

How to prepare it:

Cut the green from the fennel. Cut the rest of the fennel into thin slices. Peel the white asparagus and cut the edge of the asparagus. Peel and chop the onion.

Put a dash of oil in a deep pan and let it get hot. Add the onions and fennel and sauté for 2 minutes. Add some anise seeds and stir well. Now add the asparagus disputes, then pour in the vegetable stock. Bring everything to the boil and let cook for 20 minutes.

Cut all asparagus into small pieces and finely chop the chives.

Remove the stock from the heat and filter it through a sieve. Put back on the heat and add the pieces of asparagus. Let it cook for another 10 minutes. Add pepper to taste.

Serve the broth with some fresh chives.
