Fennel spread… not very common and you really have to enjoy the taste of fennel to make a dish like this but it’s a nice addition to anything with fish or as a nice spread on a good piece of bread.
- 1 fennel
- 2 tablespoons of crème fraiche
- salt and pepper
- dried dill
- lemon juice
How to prepare it:
Cut open the fennel. Remove the middle. Chop the fennel and put it in an oven dish. Sprinkle some olive oil, salt, pepper and lemon juice on top. Put the fennel into the grill for 15 minutes. Stir once half way through.
Take the fennel out of the oven, add the crème fraiche to it and mash it to a smooth spread. Potentially you can add a bit of additional pepper.
