Fish stews are the best! Especially with a nice mash and tasty sauce. The best part of a fish stew is that it’s easy to make, doesn’t take much time and gives a lovely taste.  If you are making a stew with meat it always takes a couple of hours whilst fish stews are done within 30 minutes.

Ingredients for 2 pers.:

  • 200 gr tilapia fillets
  • 200 gr shrimps
  • 250 gr cherry tomatoes
  • 1 fennel
  • 2 cloves of garlic
  • Some saffron threads
  • 150 ml white wine
  • 150 ml fish broth
  • pepper

How to prepare it:

Cut the fennel in quarters, remove the root and chop the fennel in thin slices. Peel the garlic, cut them in half and remove the root. Chop the garlic in thin slices. Boil some water for the fish broth. Use a little bit of water to soak the saffron in. Cut the tomatoes in half.

Put a pan on the stove, add some oil and heat it up, once the oil is hot you can add the garlic.

After a minute you can add the fennel and let it fry for a couple of minutes while you keep stirring. Add the tomatoes as well. Add the white wine and let it evaporate. Add the fish broth and the saffron. Heat up the stove and bring the broth to a boiling point.

Cut the tilapia in bite-sized pieces. Add the tilapia and the shrimps to the stew and let it boil for 10 minutes. Add some pepper as well.

Serve with some fresh basil leaves and a smooth potato mash.
