Ingredients for 2 pers.:

  • 150 g smoked salmon
  • 150 g smoked halibut fillet (thin slices)
  • 1 lime
  • fresh parsley
  • dill
  • 1/2 red pepper
  • salt and pepper
  • 150 ml cream
  • wakame (seaweed) salad

How to prepare it:

Start by making the salmon mousse for the filling.

Grate some of the lime zest and squeeze out half a lime. Remove the seeds from the red pepper and chop a half red pepper a little. Put the salmon, red pepper, lime zest and lime juice together in the hand blender. Mix everything up a bit and gradually add some whipped cream. Continue to mix well until all the whipped cream is added. If the substance still feels firm and not creamy, I would add some extra whipped cream.

Place the halibut slices on your worktop on some kitchen foil. Place a pinch of the salmon mousse on one of the ends. Roll up the slices using the kitchen foil and put in the fridge for about 1 hour to stiffen.

Place a little wakame (seaweed) salad on a spoon. Place a halibut roll on top and sprinkle some dill on top.
