Ingredients for 4 pers.:

  • 350 gr wild mushrooms
  • 1 red chili pepper
  • fresh sage
  • fresh parsley
  • fresh thyme
  • 1 lemon
  • 2 eggs
  • 2 tablespoons flour
  • 2 tablespoons of grated bread-crumbs
  • 1 clove of garlic

How to prepare it:

Chop the mushrooms into very thin blocks. Cut the chili pepper in half and take out the seeds. Chop the chili pepper, thyme, sage and parsley. Keep some parsley on the side for decoration. Peel of the garlic, cut the garlic in half and remove the root. Put a pan on the stove and add some olive oil. Squeeze the garlic into the pan and add the chili pepper, thyme and parsley. Fritter the herbs for a minute before adding the mushrooms.  Let the mushrooms bake for about 5 minutes.

Take the mushrooms of the stove and let them cool down. In the meantime, you can grate the skin of the lemon. Chop the lemon grate into small pieces. Once the mushrooms are cooled down, add the eggs, flour, bread-crumbs and the lemon grate. Use your hands to mix the mixture.

Put the pan back on stove and add some butter. Once the butter has heated up, take one spoon on the mushroom mixture and put it in the pan. Use the back of your spoon to make a flat burger of the mixture. Repeat the same for the rest of the burgers. Fry the burgers for about 8 minutes. Turn them regularly.
