Oke, honestly I am not so sure if blind finch is the proper English name for this dish but anyway it is a delicious home made meat dish with lovely Italian ham, some minced meat and a small taste of summer! Definitely worth trying it out for yourself.

Ingredients for 2 pers.:

  • 150 gr minced meat
  • 1 egg
  • 20 gr twice backed bread
  • 80 gr Parmaham
  • 50 gr sundried tomatoes
  • 3 tablespoons of pesto
  • 30 gr Parmesan cheese
  • salt and pepper

How to prepare it:

Take a mixing bowl and add the minced meat, the eggs, the twice backed bread and some salt and pepper. Mix everything well. Place some kitchen plastic on your countertop and lay the ham slices closely next to each other on top. Divide the meat over the in way that you have a small row of ham left over on the top edge.

Fine slice the tomatoes and place a row of sundried tomatoes in the middle of the meat. Add some pesto and parmesan cheese on top. Roll up the ham from bottom to top, use the plastic if needed and press firmly.

Remove the plastic. Cut the roll into 1 person pieces. Heat up some butter in a pan. Place the finches in the pan once the butter is hot. Fry them in about 15 minutes nicely brown on all sides. Lovely with a smooth puree or mash.
