Rösti is a typical Swiss dish. It consists of grated potatoes served with cheese, bacon, egg and onion. With some pickles and onions on the side. Making rösti yourself is easy but a bit tricky because you really have to keep your focus. In this recipe, I will to show you how to make rösti cookies. I will share the recipe for the real rösti dish later.

Ingredients for 4 pers.:

  • 4 large potatoes
  • baking butter
  • for the sauce:
  • 2 tablespoons yogurt
  • salt
  • pepper
  • 1/2 lemon
  • fresh parsley

How to prepare it:

Peel the skin of the potatoes but do not wash the potatoes! You need the starch of the potatoes to bake decent cookies. Grate the potatoes. During the process the potatoes might get a darker color but this is a natural reaction, this is not bad or affecting the taste.

Sprinkle some pepper through the potato grates.

Put a frying pan on the stove. Add a decent amount of butter. Once the butter is hot, you can add a large spoon of the potato grates into the pan. I use a cooking ring to create nice cookies. Repeat the exercise so that you can bake 4 cookies in the same pan. Keep a good eye on the cookies. Make sure the pan heats up gently but not too slow and turn the cookies regularly. Bake them for about 10 minutes until the outside crunchy and the inside still soft.

I serve the cookies with a nice yogurt sauce with lemon, salt, pepper and fresh parsley. Chop the parsley, squeeze the lemon juice and stir everything through the yogurt.
