Lovely lukewarm salad with Israeli couscous, veggies and chicken. Perfect as a meal or as side salad during your BBQ.

Ingredients for 2 pers.:

  • 150 gr Israeli couscous
  • 1 large chicken fillet
  • 1 zucchini
  • 50 gr feta
  • 1 lime
  • fresh mint
  • black olives
  • pine nuts
  • 1 tea spoon of mustard
  • olive oil
  • white wine vinegar
  • 100 gr cherry tomatoes
  • salt and pepper

How to prepare it:

Boil some water and prepare the Israeli couscous like prescribed on the package. Cut the zucchini in half and use the mandolin to cut the zucchini into very thing slices. Grill the zucchini in the grill or with a grilling pan.

Cut the chicken into small bite sized blocks, season them with some salt and pepper. Place a baking pan on the stove and bake the chicken for about 10 minutes till they turn golden brown.

Put some olive oil, salt, pepper, mustard and white wine vinegar in a mixing bowl. Stir well till you get a dressing with a smooth structure.

Chop the mint, cut the tomatoes in quarters. Cut the olives in small rings and get everything ready. Take the chicken of the stove. Once the couscous is ready you can dress the plates. Start with the couscous, add the chicken, lay the zucchini on top, add the tomatoes and olives and break the feta on top. Sprinkle the dressing over the salad and finish off with some mint and pine nuts.
