Fall is here! Very tasty mash with mushrooms, brie and bacon if you wish. You can make this a vegetarian dish as well, I’ve had it without the bacon and it was delicious.

Ingredients for 2 pers.:

  • 500 gr potatoes
  • 200 gr kale
  • 200 gr mushrooms
  • 100 gr bacon pieces
  • 75 gr brie cheese
  • 2 table spoons of crème fraiche
  • milk
  • salt and pepper

How to prepare it:

Peel the potatoes and cut them in small blocks, wash them and put them on the stove, completely covered with water. You should wait till the water starts boiling.

Once the water boils, set the timer to 12 minutes. I personally like to cook the kale separately from the potatoes, because if you put them together the potatoes will take more time to be ready. If you boil them separately you need to boil the kale for about 10 min so that they stay a bit crunchy.

Cut the mushrooms into thin slices and the brie into small pieces and put two frying pans on the stove. Add some butter in one of them. Put the pieces of bacon in the pan without the butter and fry them, stir regularly.

Put the mushroom slices in the second pan, stir regularly and fry them for about 10 min.

Drain down the potatoes and the kale and take the bacon and the mushrooms of the stove. Add some milk, the crème fraiche and some salt and pepper and mash the kale and the potatoes. You can add some extra milk if needed to make it softer. Once everything is mixed well, add the mushrooms and the brie. Stir once more and add the bacon on top.
