One of my new favorites; Lasagna with lots of veggies, shrimps and salmon. Lovely, just a bit different than your regular lasagna’s.

Ingredients for 4 pers.:

  • 400 gr fresh spinach
  • 1 zucchini
  • 500 gr oncooked shrimps
  • 200 gr smoked salmon
  • 250 gr lasagne leaves
  • 70 gr Parmesan cheese
  • 2 table spoons of flour
  • 200 ml milk
  • salt and pepper

How to prepare it:

Pre heat your oven to 200 degrees

Cut the salmon into smaller pieces. Put a frying pan on the stove, add some butter and let it melt. Add the salmon once the butter is hot. Fry the salmon until the color turns more softly pink. In the meantime, you can chop the spinach and add it to the salmon. Stir once in a while and let the spinach shrink.

Place another pan on the stove, add some butter and let it melt. Now you can add the shrimps, fry them on a hot stove. Season them with some pepper and fry them till they turn pink.

Cut the zucchini into small slices. Put a third pan on the stove add a bit of olive oil and fry the zucchini slices for a couple of minutes.

Now you can start making the sauce. Place a bit of butter in a small pan and put it on the stove.

The butter in your pan must be melted by now, put the flour into the pan and start stirring. Everything will go quickly from now. The flour will start to clod together. Poor the milk in small batches into the pan whilst you are stirring, make sure that you take out all the clods. After a while, by adding more milk a smooth white sauce will start to exist. If needed you can add some extra milk. Once you have the sauce, add 50 gr of  the grated parmesan cheese and some pepper. Keep stirring until the cheese is melted and take of the stove.

Get yourself a large but flat oven dish and grease it with some butter. Place all the ingredients to build your lasagna. Start with a layer of the salmon-spinach mixture. Place a layer of the lasagna leaves on top. Cover these with the zucchini slices, season with a bit of pepper and lay the shrimps on top. Finish with a bit of the sauce and after that a layer of the lasagna leaves. Now you can restart the process again with a layer of the spinach-salmon mixture. Finish off with the sauce and sprinkle the remaining Parmesan cheese on top.

Place the lasagna in the oven for 35 minutes.
