Ingredients for 2 pers.:

  • 500 g potatoes
  • 1 large leek
  • 150 g smoked salmon
  • 1 garlic clove
  • fresh chives
  • 2 tablespoons mustard
  • 50 ml dry white wine
  • 100 ml whipped cream
  • ground mustard seeds
  • pepper

How to prepare it:

Clean the leeks and cut them into thin rings. Cut the smoked salmon into small pieces. Finely chop the chives. Peel the garlic and cut it about half. Remove the root.

Peel the potatoes and put them in a pan and put them under water.Put the pan on the heat and bring the water to a boil. Let the potatoes boil for at least 12 minutes or until the potato is soft enough to mash.

Put a frying pan on the heat. Melt a bit of butter and put the leeks in the frying pan. Squeeze out the garlic. Sauté the leeks and extinguish with the wine after 2 minutes. Let the wine evaporate. Now add the mustard, some pepper, and some grounded mustard seeds. Stir well. Add the whipped cream and stir to a soft sauce.

Meanwhile, fry the salmon in another frying pan until it turns soft pink.

Drain the potatoes and mash them (with a pestle or just with a fork). Add the fried salmon, leek mixture and chopped chives. Stir well until you get a smooth mash. Add a little milk if necessary.
