Delicious leek soup with fried and seasoned shrimps as a small surprise. 🙂 The leek soup is smooth and a bit creamy but nice and thin with shrimps added for a small bite. The shrimp really fits well with the smooth leek taste.

Ingredients:

  • 2 pieces of leek
  • 1 onion
  • 3 small potatoes
  • 2 l vegetable broth
  • 1 clove of garlic
  • 50 gr small shrimps
  • fresh parsley
  • 200 ml cooking cream
  • pepper

How to prepare it:

Clean the leeks and chop them. Peel the potatoes and grate them. Peel the garlic, cut it in half and remove the root.

Put a large pan on the stove. Add some oil in the pan, once the oil is hot you can add the onion and the leek. Fry the vegetables for 2 minutes whilst stirring, squeeze the garlic with the vegetables. Add the potatoes and stir once more. Add the vegetable broth and heat up the soup till it is boiling. Boil the soup for 15 minutes. Chop the parsley. Place a small pan on the stove, add some butter. Once the butter is melted you can add the shrimps. Fry the shrimps for a couple of meetings and add some pepper and parsley.

In the meantime, you can mash the soup with your food processor, add the cooking cream and taste the soup. Usually I add a little bit of pepper at this point.

Serve the soup with the shrimps and some freshly chopped parsley.
