Sometimes it is just really nice to have a lazy Sunday with an amazing lunch! And this is the dish for one of those days!

Ingredients for 2 pers.:

  • 1 fennel
  • 200 gr smoked salmon
  • pine nuts
  • 2 table spoons of creme fraiche
  • 2 spring onions
  • salad
  • salt and pepper
  • olive oil
  • dried dill
  • 2 sandwiches to bake in the oven

How to prepare it:

Cut open the fennel. Remove the middle. Chop the fennel and put it in an oven dish. Sprinkle some olive oil, salt, pepper and lemon juice on top. Put the fennel into the grill for 15 minutes. Stir once half way through.

Fry the pine nuts in a pan without any butter or oil. Make sure they do not get burned. Chop the spring onions into small rings.

Take the fennel out of the oven, add the crème fraiche to it and mash it to a smooth spread. Potentially you can add a bit of additional pepper.

Bake you bread, have it cooled down and cut it oven. Smear the fennel spread on both sides of the bread. Put the salmon on top.

Garnish the salmon with a spoon of the fennel spread. Sprinkle some pine nuts, spring onions and dried dill on top. And finish up with a bit of salad on the side.
