Easy fixed but made from scratch vegetarian macaroni with veggies and halloumi cheese!

Ingredients for 2 pers.:

  • 150 gr macaroni
  • 2 tomatoes
  • 1 eggplant
  • 1 onion
  • 1 lemon
  • 500 ml passata di Pomodori
  • fresh herbs (parsley, basil, sage, thyme, chives, oregano)
  • 200 gr halloumi
  • 1 clove of garlic
  • salt and pepper

How to prepare it:

Preheat your oven in grill mode.

Meanwhile, boil some water to peel the tomatoes. Lightly cut a cross into the tomatoes and put it in the boiled water for a minute until it releases the skin. Remove the skin of the tomatoes and cut the tomatoes into cubes.

Put a pan with water on the stove to cook the macaroni. Boil the macaroni as shown on the package.

Cut the eggplant into small cubes.

Chop the spices finely. Peel and chop the onion. Peel the garlic, cut it in half and remove the root.

Put a deep pan on the Stove. Add some oil and add the onion as soon as the oil is hot. Now add the eggplant and bake for a few minutes whilst stirring. Squeeze the garlic with the eggplant and add the spices. Squeeze out the lemon juice and add the lemon juice and the passata. Bring the whole to a boiling point. finally, add the tomato cubes as well. Let the mixture boil for 10 minutes. Add some salt and pepper to taste.

Remove the macaroni from the stove, pour it off and put the macaroni in a large baking dish.

Divide the tomato-eggplant mixture over the macaroni and stir well.

Cut the halloumi into thin slices and divide over the macaroni. Sprinkle some olive oil and pepper over it.

Put the dish 10 minutes under the grill.

Pull the dish out and sprinkle some chopped basil over it before serving.
