Cooking and dining should be a daily returning party. I believe that a plate filled with food must be a pleasant surprise for your eyes as well as your taste buds. This is a challenge that I’m happy to take on every day and one of the reasons why I’m always trying to work with colors and fresh flavours. Sometimes it works out but sometimes dishes have the perfect taste but there is just no color possibility and they look so awful that you can’t really take good pictures of it. Luckily that’s not the case with this dish. The shiny, crispy look of the chicken crust fits well with the red and green of the vegetables and herbs. The chicken is tastes and crispy with a bit of a bite in the marinated skin and the fresh taste of the tomatoes and pointed pepper makes a perfect match, both by its looks as well as its taste.

Ingredients for 4 pers.:

  • 1 kg chicken wings
  • 250 gr cherry tomatoes
  • 2 pointed peppers
  • Olive oil
  • 3 twigs of fresh thyme
  • Powdered paprika
  • Chili powder
  • Salt and pepper

How to prepare it:

Pre-heat the oven to 180 degrees. Unwrap the chicken wings and put them on a plate. Chop the thyme and put the chopped herbs in a small bowl. Add 4 tablespoons of olive oil, add one teaspoon on powdered paprika and a hint of chili powder. Stir well. Marinate the chicken with the mixture, massage it in on all sides. Let it marinate for 10 minutes.

Cut the pointed pepper into bite sized pieces and wash the tomatoes.

Put the chicken wings in an oven dish. Add the pointed pepper and the tomatoes. Sprinkle some olive oil, salt and pepper on top.

Put the chicken into the oven. The wings need to bake for 30 minutes.
