One of my personal favorites! Lovely marinated fresh salmon in an easy stir fry with a lot of veggies.  Easy to make after a long working day.

Ingredients for 2 pers.:

  • 300 g salmon
  • 1 stump pak choi
  • 200 g stir fry noodles
  • 200 g bimi
  • fresh ginger
  • powdered 5 spices
  • 1 spring onion
  • 1 tablespoon soy sauce
  • 2 tablespoons ketjap
  • 1/2 lemon
  • 1 garlic clove

How to prepare it:

Cut the salmon into bite-sized pieces. Put the soy sauce, ketjap sauce and some 5-spice powder in a mixing bowl.  Squeeze out 1/2 lemon and add the juice. Peel the garlic, remove the carrot and squeeze the garlic out with the sauce. Grab a piece of ginger of 2 by 2 cm, peel the ginger and grate it with the sauce. Stir everything together. Put the salmon in here and stir well. Allow the salmon to marinate for about 10 minutes.

Cut the ends of the bimi and put the bimi with plenty of water in a small saucepan. Bring to the boil and cook for 5 minutes.

Cut the end of the pak choi. Remove the leaves and chop them more finely. Cut the stems into thin strips. Finely chop the spring onion.

Cook the wok noodles according to the instructions of the packaging. Put a large frying pan on the heat. Put in some wok oil and start by stir frying the pak choi and the marinated salmon. After 3 minutes, add the leaves of the pak choi and bimi.  Stir well and simmer for another 3 minutes. Now add the drained noodles.  Let everything warm and serve with the raw spring onion over it.
